Lo que no ha cambiado es la importancia del formato bocadillo, que contin\u00faa siendo clave para el sector.<\/p>\n<p style=\"text-align: justify;\">La jornada cont\u00f3 tambi\u00e9n con la participaci\u00f3n del viceconsejero de Desarrollo Rural de la Junta de Castilla y Le\u00f3n y director general de Instituto Tecnol\u00f3gico Agrario (ITACyL), Jorge Llorente quien indic\u00f3: \u201ctenemos que comunicar la sostenibilidad, el respeto al medio ambiente, el bienestar animal y el desarrollo rural que supone el jam\u00f3n\u201d, explic\u00f3 Llorente, como representante de Tierra de Sabor, patrocinador Platino del Congreso Mundial del Jam\u00f3n.<\/p>\n<p style=\"text-align: justify;\">A continuaci\u00f3n, Pablo Contreras, profesor en EAE Business School, present\u00f3 los principales drivers de consumo que mueven a las generaciones de millennials (nacidos entre 1980 y 1995) y centennials (nacidos de 1996 en adelante). Estas dos generaciones, que suman casi 16 millones de consumidores, mantienen una estrecha relaci\u00f3n con las nuevas tecnolog\u00edas, son poco accesibles a trav\u00e9s de la publicidad convencional y prefieren guiarse por las recomendaciones de amigos o de influencers, seg\u00fan explic\u00f3 Contreras. Tambi\u00e9n, destac\u00f3 que \u201clos millennials no quieren ser consumidores pasivos, quieren participar en las decisiones de las marcas y opinar si lo que hace una marca les gusta o no\u201d.<\/p>\n<p style=\"text-align: justify;\">Bas\u00e1ndose en una encuesta que ha realizado EAE Business School a 250 personas sobre sus h\u00e1bitos de consumo y su relaci\u00f3n con el jam\u00f3n, Contreras destaca el gran inter\u00e9s que tienen los millennials y centennials por los productos regionales, incluso m\u00e1s que para la generaci\u00f3n X. Asimismo, el profesor indic\u00f3 que el 88% de las personas encuestadas consumen derivados del cerdo, y m\u00e1s del 80% de los millennials y centennials, sienten placer al comer jam\u00f3n ib\u00e9rico y blanco, siendo estos \u00faltimos los que m\u00e1s placer experimentan.<\/p>\n<p style=\"text-align: justify;\">Por su parte, Juli\u00e1n Gonz\u00e1lez, director de Marketing de ELPOZO Alimentaci\u00f3n explic\u00f3 su visi\u00f3n sobre c\u00f3mo el sector jamonero se comunica con estos nuevos consumidores. En este sentido, Gonz\u00e1lez indic\u00f3 que \u201cel consumo no se crea ni se destruye, solamente cambia de lugar y se adapta a las restricciones que nos hemos encontrado con la pandemia\u201d, refiri\u00e9ndose a la importancia de nuevos canales de venta como el delivery o la compra online. Asimismo, Gonz\u00e1lez destac\u00f3 la importancia del v\u00eddeo al intentar llegar a las nuevas generaciones de consumidores a trav\u00e9s de redes sociales como Instagram o TikTok y de las
